Carrot Cake

This has nothing to do with Technology and I cannot

remember where we got this recipe…….but for all my

family and friends…..HERE IT IS! ENJOY!


Carrot Cake

2 cups flour

2 teaspoons baking powder


1 1/2 teaspoon baking soda


1 teaspoon salt


2 teaspoons cinnamon


2 cups sugar


1 1/2 cup oil


4 eggs


2- 3 cups raw carrots


1 cup drained crushed pineapple
1 cup coconut


1 cup walnuts or pecan crushed

mix all dry ingredients then add sugar, oil, and

eggs. mix well. Stir in carrots, pineapple, nuts,

then turn into a 13 x 9 inch pan.

Bake 350 for 35 to 50 minutes or until it springs

back when touched lightly. Let cool. then add icing.

Icing:

1 cup margarine/butter (what you prefer)


8 ounces cream cheese


1 teaspoon vanilla


Mix together then add 1 pound powdered sugar


mix well then add 1 cup nuts and 1 cup coconut


This is truly an excellent recipe.
